祖国医学中谈五味时指出:酸人肝,肝病时宜少食酸。临床中发现,有的肝炎急性期患者要求喝点醋调味,中药五味子、乌梅、山楂等都有明显酸味,对多数肝炎患者有降低转氨酶的效果。但是,醋一旦食用过量,超过一定的限度,有可能不利于肝细胞的再生修复。有人采用五味子粉降低转氨酶,常引起反酸烧心,影响食欲,停用五味子后,有一半左右的人转氨酶反跳。经验认为:五味子、乌梅、山楂、食醋入药时,都不宜过量使用。酸能入肝,多食有害,少量调理,当作载体,不无好处。
肝病患者经常吃点鱼或牛、羊肉,补充蛋白质,以利于肝功能好转,肝脏修复。鱼肉鲜美但腥味难闻,做鱼时加些醋,除腥很起作用。牛、羊肉营养价高,不煮烂就不利于消化吸收,如能在肉中加些食醋蒸煮,则较易煮熟。此外,不少食物稍加酒、醋有利于消化吸收,且可增加其香昧。如排骨炖汤时,加点醋可使骨头中的钙、磷等物质溶出,有利于人体充分吸收;把海带加不并放几滴醋煮一下,海带变得柔软可口;土豆丝加食醋烹炒,可变得清脆适口;夏天吃点醋拌凉菜,不仅清凉爽口,而且可消炎杀菌。
患肝病者讲究食疗,想做一些美味佳肴,无疑离不开醋。醋还有散淤解毒之功。可见肝病患者如用醋适度,方法得当,可辅助并改善症状,防治多种并发症。
