烹调技术直接影响食物的营养素成分。如肉类食物的烹调,一般有红烧、清炖和快炒三种。但从保存食物的维生素着眼,清炖瘦猪肉将破坏维生素B1 60-65%;急火蒸将损失维生素B1 约45%;而快炒的损失仅13%。因此,做荤菜时,可尽量采用急火快炒的方法。吃蔬菜则要先洗后切,切后尽快下锅,同样用急火快炒。炒时加些淀粉,可使色香味俱佳,而且对蔬菜中的维生素C具有稳定作用。骨头做汤时设法将其敲碎并加少许醋,可以促进钙、磷的溶解吸收。
  在做主食时,淘米搓洗可使大米中的B族维生素损失1/4。米饭先煮后蒸可使B族维生素损失50%,所以应该反对做捞饭。肝病患者宜吃焖饭或钵蒸饭。煮稀饭加碱,几乎可以使B族维生素全部破坏,应注意避免。有人认为肝病患者可用鲜酵母发面,用75%玉米面加25%黄豆面蒸窝头均可减少维生素B1、B2的损失。菜汤、面条汤、饺子汤中含有食物的30-40%水溶性维生素,不要浪费掉。另外油炸食品宜少吃,油条、炸糕中的维生素B1几乎都被破坏,而且脂肪加热到500-600℃时会产生致癌物质,长期多量吃油炸食品者易患癌症。
  总之,一般饮食烹调的营养要求,也同样适用于肝病患者。通常认为:烹调时,色宜美,味宜鲜,多选植物油,少放食盐,主食多蒸煮,副食少煎炸,是肝病患者合理烹调的基本要求。
